Dessert sushi

Pursuant to our decision to test already-allergen-free recipes (and Chef Ben’s nudging), I did a bit of internet searching related to “dessert sushi”, and after enjoying photos of crispy rice treats topped with candy fish, I found this recipe for fresh fruit sushi at Gemma’s Bigger Bolder Baking. I didn’t have to make any changes to the recipe, aside from using safe vanilla extract, so, following blog sharing conventions, I won’t re-post the recipe here. Suffice it to say that a simple combination of sushi rice, sugar, salt, and coconut milk, arranged with whatever fresh fruit and decorations you like, can yield a beautiful and tasty dessert. Next time I make it I’ll replace the coconut milk and let you know how it turns out!
